Basic Popover

Ingredients:

  • 1 tbsp unsalted butter, melted and cooled, plus extra for pan
  • 4 3/4 oz flour (by weight)
  • 1 1/2 tsp (savory popovers) or 1/2 tsp (sweet popovers) kosher salt
  • 1 tbsp sugar (sweet popovers only)
  • 2 eggs, room temperature
  • 1 cup whole milk, room temperature

Tools:

  • Blender
  • 6-cup popover pan
  • Oven

Directions:

Preheat oven to 400 degrees F.

Grease popover pan with butter.

Place all ingredients into a blender and run for 30 seconds on highest speed. Divide the batter evenly between the cups of the popover pan, each should be about 1/3 to 1/2 full. Bake on the middle rack of the oven for 40 minutes. Remove the popovers to a cooling rack and pierce each in the top with a knife to allow steam to escape.

Serving Suggestions:

  • Remove top and fill with soup
  • Stuff with pudding or mousse and top with whipped cream.
