Ingredients:
- 1 tbsp unsalted butter, melted and cooled, plus extra for pan
- 4 3/4 oz flour (by weight)
- 1 1/2 tsp (savory popovers) or 1/2 tsp (sweet popovers) kosher salt
- 1 tbsp sugar (sweet popovers only)
- 2 eggs, room temperature
- 1 cup whole milk, room temperature
Tools:
- Blender
- 6-cup popover pan
- Oven
Directions:
Preheat oven to 400 degrees F.
Grease popover pan with butter.
Place all ingredients into a blender and run for 30 seconds on highest speed. Divide the batter evenly between the cups of the popover pan, each should be about 1/3 to 1/2 full. Bake on the middle rack of the oven for 40 minutes. Remove the popovers to a cooling rack and pierce each in the top with a knife to allow steam to escape.
Serving Suggestions:
- Remove top and fill with soup
- Stuff with pudding or mousse and top with whipped cream.
